The Story
This is 100% Chenin Blanc from sunny Vouvray. This wine - and all the estate's Vouvray's for that matter - is a pet project of Catherine's, not made by Pierre. It comes from 40 year old vines planted in a flinty clay soil. To preserve freshness and aromatics, the grapes are gently pressed, and vinified in stainless steel without going through malolactic fermentation. It's a perfect wine for the changing seasons, and can be paired with soy-honey glazed mushrooms or pork shoulder braised in a coconut milk/lemongrass broth.
