This is 100% Chardonnay. Champs Rayés means 'Striped Field' and refers to the two veins of marly clay soil that run through the vineyard. The juice gets aged in oak barrels and sits on the lees for a whopping 6 years prior to release. It is incredibly dry and textured with wonderful expressive aromas of honeyed brioche. We would enjoy this with oyster crudo with a Champagne mignonette: In a small bowl, combine lemon juice, peppercorns, and shallots. Let stand in the fridge for about an hour before adding a splash of the Champs Rayes to each oyster and gobble it all down.
