100% Pinot Noir from vineyards in two separate towns in the Pfalz of Germany. The 'Aus Den Lagen' line of wines aims to showcase single-varietal, estate-grown grapes in specific microclimates, of Ersten Lagen and Grossen Lagen quality. The wine is vinified with 30% whole clusters, and sees 18 months of barrel. It is very much Burgundian in style, and is reminiscent of the "featherweight" wines of the Beaune. This Spätburgunder is pure, fresh, and earthy, with spiced dark fruit character. It's incredibly balanced but still packs a delicious punch. We'd pair this with Chongqing Chicken, a smokier and more flavorful version of Kung Pao Chicken.
