Grown on steep terraced vineyards with limestone, clay, red sandstone, slate, and gravel soils, some of the grapes see skin-contact fermentation resulting in a dense, layered, and deliciously complex wine. Aromas of white flower and salt and stone fruit give way to a rich but playful palate of high energy and persistent acidity with 'zippy' minerals and remarkable depth. Pair with Poulet Basquaise, sea bass and a spring pea risotto or salted cod and pan con tomate.
