VERY LIMITED. This wine is made of 100% Chardonnay sourced from organic vineyards in Chassagne-Montrachet and Remigny. This Bourgogne Blanc is rich but balanced by youthful acidity and freshness. It is aged in large oak barrels, 10% of which are new, bringing a soft creaminess under notes of almond croissant, citrus, yellow apple, and pear. A conscious use of oak makes for a beautifully balanced wine with lots of character. We would pair this with 'fish & potatoes' (local fresh cod in a simple butter sauce and charred lemon with Northern New England potatoes) or roasted chicken thighs finished in a mustard and shallot sauce.
