​Vinification: Manual harvest, direct pneumatic pressing of whole, unpressed bunches, cold settling for 2 days, alcoholic fermentation with native yeasts and malolactic fermentation in barrels. Racking into stainless steel tanks for assembly and resting for 1 month before filtration and bottling.
