This wine is made of around 70% Garnacha Tintorera (aka Alicante Bouschet) and 30% Moravia Agria, and a tiny percentage of old vine Pardillo and young Garnacha. The wine has mouthwatering acidity, grippy tannins, and a palate of earthy dark berries, perfect for food. We would pair this with Mojo marinated flank steak tacos. The Moravia Agria (a high-acid, low alcohol blending grape) is from a single vineyard on sandy clay-calcareous soils in neighboring Manchuela, which is pruned to get larger grapes, since there is only around 50 hectares, left in Spain. The grapes are fermented separately in concrete and French barriques, with minimal sulfites added.
