- Produced in collaboration with Blue Hill at Stone Barns Center for Food and Agriculture
- Made with over 50 organic-certified botanicals featuring lemongrass, anise, hyssop, genepi, lemon balm, fennel, spearmint, thyme, ambrette, and angelica
- Produced using freshly pressed sorghum juice from sorghum grown at Blue Hill at Stone Barns, and organic, non-GMO sugarcane spirit from Brazil
- A blend of (1) over 30 herbal distillations and (2) infusions made with the fresh sorghum juice combined with over 20 botanicals previously macerated in sugarcane spirit
- Botanical distillates produced using a 400-liter bain-marie hybrid pot still
- Macerations and distillates are blended and adjusted over several months
- Sweetened with organic, raw cane sugar
- Green and grassy with notes of fresh mint, anise, crisp lemon balm, and sweet, warming fennel seed with a long peppery finish
