The Story
This dessert wine is made from 100% Muscat of Alexandria, from old vines ranging from 90-100 years old. Pair it with braised pears, tres leches cake, or basque cheesecake. The vineyards in Malaga are treated to an extremely dry Mediterranean climate, and because they are also relatively high in elevation, go through extreme diurnal shifts in the summertime. Altogether, this climate produces extremely concentrated and acidic grapes. The grapes are late harvested, and partially dehydrated to really concentrate their sugars. The wine is then fermented to 10% alcohol, still with a whopping 190g/L of residual sugar. The wine is full with flavors of preserved lemon, candied ginger, vanilla, and possesses a distinct minerality, and texture.
