We blended three barrels containing mixed fermentation saison, added large amounts of local wildflower honey from Hill Top Apiaries in Simsbury CT, and let the blend undergo a long secondary fermentation. Notes of floral honey, balanced acidity, and deep complexity from the wide array of wild microbes in our house culture.
