This wine is made of 100% Chardonnay. En Remilly is a continuation of the famous Grand Cru vineyard Chevalier-Montrachet, which faces south and produces beautifully balanced wines. En Remilly faces south-west, but in the era of warming temperatures, this may still prove to be a positive for the quality of the wines. This is quite the special treat. Only 2 barrels of this wine have been produced. Pair it with butter poached lobster sprinkled with chives over bucatini pasta.
