The Story
This 100% Cabernet Franc is sourced from Ravines estate vineyards within the Finger Lakes AVA. The grapes are grown organically, destemmed, and the fermented wine is aged for 14 months in 3 year old 2000L Austrian Oak casks. It is juicy but with oak aging, medium bodied and supple. It is full of dark berries, faint notes of warming spices, and the classic herbaceousness Cabernet Franc is known for. Pair it with Bon Appétit's Sizzling Pork and Eggplant Hiyayakko.
