This wine is made from 100% Heida, PaĂŻen, or more commonly known to some of us as Savagnin. Pair this with roasted oysters with cultured butter, bone in chicken thighs with a potato puree and pine nuts, or pan-seared duck breast and roasted fennel. This cuvĂ©e is a collaboration between Galician-born Priorat winemaker Fredi Torres, and St. Jodern Kellerei, a co-op winery based in Visperterminen, Switzerland, in the Valais AOC. The grapes are harvested by hand, destemmed gently, and fermented with native yeasts at very low temperatures, to preserve fruit and freshness. It carries delicate flavors of spiced white peach, ripe mango, honeysuckle, and white pepper. It is still a very powerful wine, usually true for 100% Savagnin, and grows at altitudes of over 1,000 meters above sea level. Visperterminen is actually home to the world’s highest vineyard.Â
