100% Tardana, a late-ripening grape variety native to Utiel-Requena in southeastern Spain outside of Valencia, grown very sparsely outside of the Vera de Estenas estate. The grapes are sourced from 50 year old bush vines and direct pressed into concrete tanks, before being passed onto clay tinaja, or amphora pots. The wine develops a ton of texture throughout the vilification process but maintains its bright tropical fruit character. It is a versatile wine all year round, and pairs well with fresh garden salads with proteins off the grill, or richer poultry stews and poached fish with potatoes and asparagus.
