This is 90% Chardonnay and 10% Riesling, grown organically on limestone soils in the northern Pfalz of Germany. The Chardonnay here has a little more acidity due to the cooler temperatures and limestone soil, and the naturally acid-rich Riesling gives it an added boost, hightening and sharpening its flavor and aromatics as well. Pair this with scallop aguachiles, or a cold poached shrimp roll on a hot summer day!
