The wine is made with as little intervention as possible. The grapes are grown organically, hand harvested, with no fining or filtering. It's bright red fruit is reminiscent of Oregon Pinot Noir, with an extra layer of herbaceousness. Pair it with hard smoked sausage and potato salad with a strong presence of dill and oregano.
