The Story
This wine is made of 100% Sangiovese. It is Caparsa's entry level wine, but it rivals other producers' top cuvées. Caparsa aims to showcase the terroir of Chianti, specifically in Radda, and ages its wines in cement, instead of oak. You will be met with bright acidity wrapped in grippy tannins, showcasing the wine's vitality. It would do great with a nice decant, or tucked away to age for couple years. We would pair this with the classic Tuscan dish of Maccheroni alla poderana. Literally, 'macaroni', this dish takes a normal elbow pasta and gives it new life with a delicious sauce flavored with artichokes, sausage, and fava beans.
