The Story
This lovely rosé Champagne is made from 92% Chardonnay and 8% Pinot Noir. Etienne makes this wine by combining Pinot Noir with the base wine from his entry level Blanc de Blancs cuvée, 'L'Echapée Belle, to produce a similar wine but with the obvious twist of some added red fruit. It spends 18 to 24 months on its lees before being disgorged and bottled as an extra brut. Pair it with a duck terrine, or your favorite style of lobster roll.
