The Story
This wine is made from 60% Montepulciano and 40% Sangiovese. Certified organic and biodynamic. The Sangiovese is picked earlier to highlight its fresh acidity, while the Montepulciano comes later, bringing a fruity, structured backbone to the wine. It spends 12 months on the lees in concrete, and 6 more months in bottle for release. It has strong notes of black cherry, fennel and that classic savory bitterness many italian red wines tend to have. This is a special wine to have on any night of the week, with a roasted chicken, juicy grilled ribeyes with green beans and cherry tomatoes, or with a shepherd's pie.
