The Story

This wine is made of 100% Chardonnay, from "Les Forneaux", the only Premier Cru in Chablis to face due South. We would love to pair it with something crispy or fatty, like otoro sushi or fried calamari. The grapes are from 32 year-old vines on limestone soils above the river Le Serein. Done a little more 'old-school', this wine is aged in a combination of neutral oak and stainless steel, and sees lees aging for 5 to 8 months. A wine that has a rounder texture than expected and a touch of fresh Irish cream and cultured butter. Supporting the still-pure fruit of ripe note of nectarine and peach in addition to the Meyer lemon and freshness, “Les Forneaux” is an incredible wine that is well-suited for indulging tonight or going the distance in your cellar. Due to reduced yields in 2021, the 2019 and 2020 vintages have only been released in small amounts, so get it in your glass before it’s gone.
