The Story
This wine is made from 100% Teroldego, grown organically on alluvial clay and gravelly, pebbly soils. Morei is an experimental single-vineyard bottling, where the wine goes through its usual untouched maceration in clay tinaja for 8 long months, and 1/3 of the wine gets transferred into cilindrica, where it spends an additional 12 months away from its skins. The cilindricas are large unlined clay pots, that impart lots of flavor and allow the wine to experience a more natural aging process. The wine is extremely limited and worth grabbing before its gone, to be paired with sweet and sour pork tenderloin, or a classic reverse-seared steak basted with rosemary and thyme butter.
