This wine is 100% Nerello Mascalese, from 70-80 year old vines in the contrada of San Lorenzo. The vines grow on deep, soft volcanic ash with small stones in the mix, facing north on Mount Etna. The wine ferments at low temperatures, sees malolactic fermentation, and is aged in large French oak barrels for 14 months. This is 'Grand Cru' Etna: rich, full-bodied, saline, acidic, complex, and just mind-blowing. Pair it with cavatelli and a sausage ragu, being sure to whip up a super rich and delicious sauce.
