This wine is 85% Nerello Mascalese, and 15% of a field blend including Nerello Cappuccio, Alicante, and Grenache. The wine comes from a less than two hectare parcel of vines on the cooler, north-facing side of Mt. Etna, and is vinified partially by whole-cluster fermentation, with more stems included in some years to further lower the alcohol. Very minimal intervention with fermentation done in cement tanks without temperature control, and with spontaneously fermenting indigenous yeasts. After fermentation the wine sits in large Slavonian oak barrels before bottling. The resulting wine is soft, with a ton of juiciness, acidity, and notes of light red berries taking the stage. Pair this with grilled lamb chops, with a homemade labneh and a side of grilled broccolini.
