This Grenache rosé is made from grapes just outside the Happy Canyon AVA in the Santa Ynez Valley of California. The grapes were foot-stomped for a gentle color extraction before being pressed soon thereafter. The juice rested in tank for a night before being transferred to neutral oak barrels, where it sat for an additional 6 months. The wine is inspired by a typical Provençal rosé, crisp, light, and bursting with light red berry and lemon notes. Pair this with a pan-seared striped bass, over rice and a coconut curry.
