The Story
This wine is made from 100% Mavrud, an ancient grape indigenous to Bulgaria. Grown in the Thracian Valley in Southern Bulgaria, on sandy limestone and pummus soils that were once part of an old-growth forest. Mavrud is a thick-skinned, late-ripening red variety, still with enough acid to remain light and fresh on the palate. The wine is aged in neutral vessel, and on its lees for 8 months. It has flavor notes of tart cherry, oregano, a little salt, and rich velvety tannins. Pair this with a juicy ribeye served with green beans and garlicky mashed potatoes.
